Pork Sinigang (Pork Sour Soup) with Lemon

Sinigang is one of our favorites! It gives this very nice, warm, sour and comforting feeling especially during the cold season (or rainy season in the Philippines). 

 1 medium onion, cut into quarters
 2 2 medium tomatoes, cut into quarters
 2 qts water
 2 lbs pork buto-buto ( ribs, neck, shoulder, pork belly or etc.)
 2 cups green beans, ends trimmed
 1 large eggplant, cut diagonally
 1 medium daikon radish (aka. labanos), sliced
 1 bunch spinach
 1 large chili or banana pepper, cut in half
 ½ cup lemon juice, no seeds (roughly 4 medium lemons)
 Salt and fresh ground pepper, to taste

In a large pot, add the water and onion in high heat. Bring to a boil.

Add the tomatoes and the pork, bring to a boil and then lower the heat to medium-low.

Simmer for 45 minutes, until the pork is tender. Cooking time will vary depending on the thickness of the size of the pork.

Add the radish, cook for a minute or 2.

Add the eggplant and green beans, cook for 2-3 minutes.

Add the chili, lemon juice, salt, and pepper. Stir to combine all the ingredients.

Turn off the heat. Add the spinach.

Serve warm.
