Pork Sinigang (Pork Sour Soup) with Lemon

Sinigang is one of our favorites! It gives this very nice, warm, sour and comforting feeling especially during the cold season (or rainy season in the Philippines).

Ingredients:
1medium onion, cut into quarters
22 medium tomatoes, cut into quarters
2qtswater
2lbspork buto-buto ( ribs, neck, shoulder, pork belly or etc.)
2cupsgreen beans, ends trimmed
1large eggplant, cut diagonally
1medium daikon radish (aka. labanos), sliced
1bunch spinach
1large chili or banana pepper, cut in half
½cuplemon juice, no seeds (roughly 4 medium lemons)
Salt and fresh ground pepper, to taste
Directions:

In a large pot, add the water and onion in high heat. Bring to a boil.

Add the tomatoes and the pork, bring to a boil and then lower the heat to medium-low.

Simmer for 45 minutes, until the pork is tender. Cooking time will vary depending on the thickness of the size of the pork.

Add the radish, cook for a minute or 2.

Add the eggplant and green beans, cook for 2-3 minutes.

Add the chili, lemon juice, salt, and pepper. Stir to combine all the ingredients.

Turn off the heat. Add the spinach.

Serve warm.
