You can use different kinds of meat. Shrimp works great, beef gives a very nice flavor as well.
The choices of the vegetables are up to you, additional vegetables that you can add (or omit) are okra, water spinach (kangkong), string beans (sitaw), and/or taro (gabi). I have tried adding potato leaves (talbos ng kamote) and it tastes great as well!
Its sour flavor
The most important thing that makes this dish unique is its sour flavor. You can’t miss that!
You can use a lot of different ingredients to make it sour such as cucumber tree/bilimbi (kamias), young tamarind (sampaloc), guava, lemon and the like.
As famous as this dish in the Philippines, a readymade tamarind soup base powder is an easy alternative. Though we personally don’t use the tamarind soup base powder anymore because it has MSG (vetsin). Well everyone is different, right? There is nothing wrong if you decide to go that route.
We make and love our sinigang with lemon! You should give it a try! It gives this natural sour flavor and undoubtedly delicious.
I grew up eating a lot of this dish, and I love it! It is one of our traditional comfort food. My husband likes it, nothing to ask about that, he is a Filipino after all. My son, he is beginning to like it. ^_^.

Pork Sinigang (Pork Sour Soup) with Lemon

In a large pot, add the water and onion in high heat. Bring to a boil.
Add the tomatoes and the pork, bring to a boil and then lower the heat to medium-low.
Simmer for 45 minutes, until the pork is tender. Cooking time will vary depending on the thickness of the size of the pork.
Add the radish, cook for a minute or 2.
Add the eggplant and green beans, cook for 2-3 minutes.
Add the chili, lemon juice, salt, and pepper. Stir to combine all the ingredients.
Turn off the heat. Add the spinach.
Serve warm.
