There’s something so comforting about a simple Filipino dish that brings you right back home—and Tortang Talong (Filipino Eggplant Omelet) is one of those classics. This eggplant omelette is smoky, fluffy, and savory all at once. Growing up, it was one of the easiest (and tastiest) meals my mom would make, especially when paired with warm rice and a drizzle of banana ketchup or soy sauce with calamansi.

It’s a dish that proves you don’t need fancy ingredients to make something absolutely satisfying. All you need is eggplant, eggs, and a few pantry staples—and you’ve got yourself a Filipino comfort food favorite.

Recommended Kitchen Tools

Substitutions & Variations

  • Eggplant: If Asian eggplants are unavailable, you can use Italian eggplants. Just slice them lengthwise before grilling.
  • Protein boost: Add cooked ground pork, chicken, or beef into the beaten eggs before frying.
  • Vegetarian twist: Mix in chopped bell peppers, spinach, or mushrooms for extra flavor and nutrition.
  • Low-oil option: Use an air fryer to roast the eggplants instead of grilling or broiling.
  • Sauce pairings: Traditionally served with banana ketchup, but soy sauce with calamansi (or lemon) works beautifully too.

Tortang Talong is proof that even the simplest Filipino recipes carry so much comfort and nostalgia. Whether you enjoy it plain, loaded with extra veggies, or with ground meat, this dish will always have a place on the table. Don’t forget the banana ketchup, it’s the ultimate pairing!
