Ingredients:
2.25tsp(1 packet) active dry yeast
1.25cupswarm water (about 110 F)
1tbsphoney or maple syrup
2tbspolive oil
2cupswheat flour or all-purpose flour
1cupbread flour
1.50tspsalt (kosher salt)
Directions:

In a large bowl, mix warm water, honey, and yeast. Let sit for 5–10 minutes, until foamy.

Stir in olive oil, flour, and salt. Mix until a dough forms.

Knead for 8–10 minutes, until smooth and elastic.

Place in a lightly oiled bowl, cover, and let rise until doubled (about 1 hour).

Punch down the dough, shape into a loaf, and place in a greased 8x4-inch loaf pan.

Cover and let rise again until puffy (30–40 minutes).

Bake at 375°F for 30–35 minutes, until golden brown.

Cool before slicing (if you can wait!).
