Chinese Food is something we eat a lot and order to-go or delivered at home. And this homemade chicken fried rice sure beats what we order often. Ha! Of course, it is better!

This easy and quick chicken fried rice recipe is so filling and healthy (more protein as you noticed) with a few basic ingredients you probably already have at home.

One ingredient that I’m really looking forward to every time I am eating a chicken fried rice are the pieces of the scrambled eggs. I eat those first then go with the rest of the dish. Yum!

You can also add peas and carrots on this dish, a classic chicken fried rice always comes with them.

But of course today, I cooked this dish for my husband, so no veggies. Oh yeah, you asked, he eats those green onions!

This easy and quick chicken fried rice recipe is so filling and healthy (more protein as you noticed) with a few basic ingredients.

Ingredients
  • 4 tablespoon olive oil
  • 4 eggs, lightly beaten
  • 2 pieces bacon strips, cut into small pieces (optional)
  • 4 cloves garlic, minced
  • 1/2 medium onion, diced
  • 1lb. boneless chicken thigh, thin bite size
  • 4 cups cooked rice
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/4 cup green onion, thinly chopped
Directions
  • Step 1 In a skillet or pan, first, cook the scrambled eggs with 2 tablespoons of oil. Set aside.
  • Step 2 In the same pan, add the remaining 2 tablespoons of oil, cook the bacon until crispy. Move the bacon to the side of the pan.
  • Step 3 Add the garlic and onion. Saute for a minute then add the chicken, sprinkle with garlic powder, salt, and pepper to add flavor. Stirring every now and then to make sure the chicken cooks evenly. Cook until tender, for 3 to 5 minutes. Cooking time will vary depending on the thickness of the size of the chicken.
  • Step 4 Add the cooked rice. Season with more garlic powder, salt, and pepper (optional). Stir to combine all the ingredients. Let it cook for 2 to 3 minutes.
  • Step 5 Add the cooked scrambled eggs.
  • Step 6 Garnish with green onions.
