Chicken Lugaw (Arroz Caldo) is one of my favorite comfort food. When someone feels sick at home, this dish is a must!
The ingredients are very simple. Ginger and rice are a must! Those are what makes up this dish. You can omit the chicken, all the garnishings and this dish will still taste good.
The day I made this recipe, I don’t have green onions on hand, so you won’t see it on the picture but it tastes as good still.
A few things I do to make this dish yummy…
First, I saute the ginger well before adding the garlic and onion. Let the ginger sweat its juices a little bit until golden brown.
For the chicken, I sear or fry a little bit, skin down first, before adding the rice and water. Those golden brown crusty thing on the chicken is good just like that. Make sure you don’t over fry and burn it.
For the chicken base, we love this Organic Better Than Bouillon Roasted Chicken Base. It doesn’t have those crazy ingredients and it’s organic! What more could one ask for, right?!
We like our lugaw with lots of broth, so I added a couple of cups of water to the soup from the main recipe.

Chicken Lugaw (Arroz Caldo)
Chicken Lugaw (Arroz Caldo) is one of my favorite comfort food. When someone feels sick at home, this dish is a must!
Ingredients
- 4-inch ginger, peeled and sliced (or minced)
- 4 cloves garlic, minced
- 1 medium onion, diced
- 1 1/2 lbs. chicken, cut into bite pieces
- 1 1/2 cup rice uncooked, washed and drained
- 10 - 12 cup of water and 3 tablespoons better than bouillon chicken base or 10 - 12 cup of chicken stock
- Salt and pepper to taste
- GARNISHING:
- 3 cooked hard boiled eggs
- 1 lemon sliced
- Roasted garlic
- Chopped green onions
Directions
- Step 1 In a large pot, heat the oil in medium heat.
- Step 2 When the oil is warm enough add the ginger and saute for a few minutes until golden brown.
- Step 3 Add the garlic cook for a few seconds and then add the onion and saute for a few more minutes until it becomes close to translucent. Be careful not to burn the ginger, garlic and onion.
- Step 4 Add the chicken with a little bit of salt and pepper to taste. Adding salt and pepper with the chicken will add more flavor to the chicken while it’s cooking.
- Step 5 Let the chicken sear or fry for a few minutes skin down first then turn to cook the other side. Cook the chicken until golden brown.
- Step 6 Add the rice and then add the water and the chicken base or the chicken stock.
- Step 7 Bring to a boil then reduce the heat to low, then simmer for few more minutes, 20 to 30 minutes until the chicken is tender and rice is cooked. Stir occasionally.
- Step 8 Serve warm in a bowl.
- Step 9 Garnish with hard boiled egg, roasted garlic, splash of lemon juice, and chopped green onions.
- Step 10 Season with soy sauce, salt and pepper to taste.
