Ingredients:
3 medium Asian eggplants
3 large eggs
2 tbsp cooking oil
Salt and pepper, to taste
Directions:

Roast eggplants until skin is charred and flesh soft.

Peel off skin.

Flatten eggplants with a fork.

Beat eggs with salt and pepper, then dip eggplants to coat.

Heat oil in a skillet. Pan-fry eggplants until golden brown on both sides.

Serve hot with rice and dipping sauce.
