Easy Homemade Beef Bulgogi

This dish came out as a big surprise for me. I have tried a few times to make Beef Bulgogi at home and this recipe is a winner! It is very easy and simple, definitely a quick recipe. And sure brings the flavor we are looking for in a bulgogi. It is very close or better than what we are eating out.

Our family loves Korean BBQ and I am not going to miss this opportunity to try and cook one of our favorite Korean foods at home… Beef Bulgogi! 

Easy Homemade Beef Bulgogi

WHAT IS BEEF BULGOGI?

Beef Bulgogi is a Korean dish made of thin slices of beef, marinated and grilled on a barbeque or on a stove-top griddle. It is also often stir-fried at home. 

Honey Pig in Centerville, VA is one of the favorite Korean BBQ restaurants we go to. And we always order their Beef Bulgogi. It is sweet and freshly cooked on their stove-top griddle right on our table. 

HOMEMADE BEEF BULGOGI

Beef Bulgogi starts with a good quality meat, thin slices of beef meat. Rib-eye is the most common and what I use in my recipe below, but some use sirloin too.

If you don’t have the ready sliced meat (like the picture above) at your grocery store, you can definitely buy one piece of rib-eye meat and then slice very thinly at home. You can freeze the meat to easily cut it into very thin slices.

Cooking Beef Bulgogi at home is a little different. We don’t have the stove-top griddle at home. But rather, after marinating, I stir-fry until cooked and crispy caramelized at the ends but juicy and tender in the middle. 

Its sweet, juicy meat with a little crispy caramelized edge will make you want for more. 

The combination of sugar and honey makes this dish sweet. And a dash of red pepper flakes brings the heat. Marinate for at least an hour or overnight in the refrigerator before cooking brings more flavor.

My son loves this dish as well, he loves sweets, so my recipe below doesn’t have a lot of red pepper flakes. But feel free to add more red pepper flakes to bring more heat. 

FREEZER FRIENDLY

One of the advantages of making your beef bulgogi at home is that you can freeze the marinated meat and cook later. 

You can double the recipe below and then divide to 4 quart size Ziploc freezer bags. It is advisable to use Ziploc freezer bags because they are intended to use in the freezer. Don’t forget to label the bags with the name of your dish and the date when you made it. 

Frozen marinated bulgogi will last for some time, or to be safe, cooked and consumed within 6 months.

To cook the frozen marinated bulgogi, take one ziplock bag, allow to thaw and then cook and stir-fry with the marinated sauce. One quart-size ziploc bag should be good for 3 to 4 people.

Ingredients:

 2.50 lbs lean beef rib-eye steak, thinly sliced
 5 cloves garlic, grated
 2 inches fresh ginger, peeled and grated
  cup low sodium soy sauce
 5 tbsp brown sugar
 ¼ cup sesame oil
 2 green onions, chopped
 ¼ cup honey
 ¼ tsp crushed red pepper flakes
 Salt and fresh ground pepper, to taste
 1 tbsp extra virgin olive oil

Directions:

In a medium bowl, add the garlic, ginger, soy sauce, brown sugar, sesame oil, 2/3 of the chopped green onions (set aside the remaining 1/3 for garnishing), honey, crushed pepper and dash of salt and fresh ground pepper. Whisk to combine all ingredients. Set aside.

In a large bowl, add the beef and the marinade mixture, toss to coat with the marinade mixture. Cover with the lid or plastic wrap and marinate for at least an hour or overnight in the refrigerator.

Heat the pan on high, add the oil. Depending on the size of your pan, cook the marinated beef by batch, do not overcrowd.

Stir-fry and let the juice evaporate and caramelize on one side before turning onto the other side. Cook for 3 to 5 minutes more then transfer to a dish.

Top with chopped green onion. Serve with steamed warm rice.
